Kolo Mee

Its name is a garbled nickname — 'kolo' comes from the Cantonese 'gon lo' (dry mixed), a term that stuck after decades of customers mispronouncing it at unsigned street stalls.

Springy egg noodles are blanched and tossed dry in lard and light seasoning rather than served in broth, then topped with minced pork, char siu, and pickled green chillies. Kuching coffee shops mix each bowl to order at the counter as a quick breakfast or lunch.

Why it's made this way: The dish traces to Chinese Hakka and Foochow immigrants who settled in Kuching under British rule, and it's now so tied to the city that it was added to Malaysia's official heritage food list in 2024.
