The same spice blend that flavors Addu's home curries is now bottled and sold as a ready-made paste across the rest of the Maldives, making Havaadhu one of the only single-atoll recipes to become a nationwide pantry staple.
Havaadhu is a ground spice paste unique to Addu, blending coconut, fennel seed, cumin, dried chili, peppercorn and cinnamon into a fragrant curry base. Cooks stir it into tuna or chicken to build the atoll's signature curries, and jars of it now travel well beyond Addu itself.
Why it's made this way: Addu sits at the southern tip of the Maldives, historically a trading and navigation hub with closer ties to South Asian spice routes, and its curry paste reflects a stronger, more layered spice profile than curries made further north.
