The jasmine never touches the tea leaves at all — it's the sugar that gets infused with the blossoms ahead of time, so the floral scent comes through in every sip via the sweetener rather than the steep.
Black tea is brewed strong and sweetened with sugar that's been steeped with jasmine blossoms ahead of time, giving the tea a floral perfume without any petals in the cup. It's poured hot at Addu's Gaadiya stalls alongside the evening's savory and sweet snacks.
Why it's made this way: Addu's Gaadiya stall culture built its own tea ritual around locally scented sugar, giving the atoll's roadside tea a distinct character from the plain sweet black tea served at Malé's sai hotaa.
