Thoddoo, the island behind this paste, grows so much produce that it's the country's biggest watermelon and betel-leaf producer — yet its best-known culinary export is a curry spice blend, not any of its fruit.
Fundi Havaadhu is a curry spice paste from Thoddoo island in Ari Atoll, ground from its own distinct mix of spices and used as the base for the island's tuna, chicken and wahoo curries. It's a separate recipe from the better-known Addu Havaadhu, tied specifically to Thoddoo's kitchens.
Why it's made this way: Thoddoo's decades-long identity as the Maldives' farming island — its fields have made it the country's top watermelon and betel-leaf producer — gave it the ingredient base and kitchen tradition to develop its own named curry paste, distinct from the south's Addu Havaadhu.
