Fuvahmulah's rare freshwater lakes and marshland let breadfruit trees thrive in a way most Maldivian islands' thin, salty soil can't support, which is exactly why this curry stayed a Fuvahmulah specialty instead of spreading nationwide.

Chunks of breadfruit are simmered in a coconut-milk curry with grated coconut, smoked tuna, chili and spice into banbukeyo hiti, a thick, savory dish built around one of Fuvahmulah's most abundant home-grown crops. It's served over rice as an everyday island meal.

Why it's made this way: Fuvahmulah's two protected freshwater lakes feed unusually fertile farmland for a Maldivian island, making breadfruit and taro far more central to its everyday cooking than the fish-forward diet found on smaller, drier islands.
