It's one of the rare hedhikaa items built with no fish at all — just hard-boiled egg, cabbage and onion folded into a deep-fried pastry, making it the tea shop's default vegetarian short eat.

Bis keemiya is a semi-circular deep-fried pastry filled with hard-boiled egg, sautéed cabbage, onion and spices, sealed in a simple flour dough before frying to a crisp shell. Sold alongside gulha and bajiya on Malé's hedhikaa trays, it stands out for skipping tuna entirely.

Why it's made this way: With nearly every other short eat built around dried or smoked tuna, bis keemiya's egg-and-vegetable filling carved out a distinct, meat-free option within Malé's otherwise fish-heavy tea-shop repertoire.
