Bamako's beignet vendors fry the sweet dough in the same oil drums used for savory snacks earlier in the day, giving the fritters a faint smoky note from the street stall itself.
Balls of lightly sweetened dough, deep-fried until golden, sold hot in the late afternoon and evening by street vendors across Bamako. They're a quick, cheap bite eaten plain or dusted with sugar, popular with children heading home from school.
Why it's made this way: Fried dough snacks are a near-universal fixture of West African street food, and in Bamako beignets fill the sweet counterpart role to the city's savory grilled and fried offerings.
