Beignets (Sweet Fritters) — street food from Bamako, Mali

Some Bamako vendors fold mashed ripe banana into the dough, making a softer, sweeter fritter that sits alongside the plain wheat and millet versions on the same tray.

Balls of lightly sweetened dough, deep-fried until golden, sold hot in the late afternoon and evening by street vendors across Bamako. They're a quick, cheap bite eaten plain or dusted with sugar, popular with children heading home from school.

Why it's made this way: Fried dough snacks are a near-universal fixture of West African street food, and in Bamako beignets fill the sweet counterpart role to the city's savory grilled and fried offerings.
