The sandwich's French baguette base is a direct holdover from Mali's colonial-era bread culture, split open and refilled with a hot street-grilled filling.
A halved baguette stuffed with a fried egg, sliced grilled meat or fried fish, french fries, and a squeeze of mayonnaise or chili sauce, assembled to order at roadside stalls. It's a filling, inexpensive meal favored by workers and students grabbing food on the go in Bamako.
Why it's made this way: Bread became a Malian staple under French colonial rule, and today's baguette sandwich, stuffed with whatever hot filling a vendor has on the grill, reflects how thoroughly that imported loaf was absorbed into everyday Malian street food.
