Mopti processes such a volume of dried and smoked fish that it supplies markets well beyond Mali's own borders, reaching Burkina Faso, Ghana, and parts of Nigeria.

Sun-dried fish, rehydrated and simmered into a rich tomato-based sauce until it flakes apart and dissolves into the broth, is ladled over rice or tô. The intense, concentrated fish flavor is prized well beyond what fresh fish alone could deliver.

Why it's made this way: Bozo fishing communities on the Niger developed fish-drying as a way to preserve a catch that would otherwise spoil within hours in the Sahelian heat, and the resulting stew turned a practical preservation technique into one of the Inner Niger Delta's defining flavors.
