Capitaine is the West African French name for Nile perch, a fish that can grow to nearly two meters and is hauled straight from the Niger onto riverside charcoal grills in Ségou.

Whole Nile perch, rubbed with garlic, chili, ginger, and a squeeze of citrus, is grilled over charcoal at riverside stalls and terraces along the Niger in Ségou. It's served with rice or a spicy onion-tomato relish, the charred skin giving way to firm, flaky flesh.

Why it's made this way: Ségou sits directly on the Niger, and capitaine, a prized catch along the river corridor stretching from Mopti to Gao, is the town's signature river-to-table meal, showcasing the freshwater fish trade that has sustained riverside communities for generations.
