Yam is often boiled briefly before frying, a step that keeps the interior soft while the outside turns deeply crisp, unlike a raw-cut potato fry.

Peeled yam is cut into sticks or wedges, parboiled, then deep-fried until golden and crisp outside while staying soft within. Street vendors around Sikasso's markets sell it hot in paper, often with a dusting of chili and a side of grilled onion.
