The sauce is made from the leafy vines of the sweet potato plant rather than its roots, a way of getting a second harvest, greens as well as tubers, from the same crop.

Young sweet potato leaves are pounded and simmered with oil, onion, and often fish or meat into a soft, everyday green sauce, served over rice or tô. It's an unassuming but near-daily dish in the farming villages around Sikasso.

Why it's made this way: In the yam- and sweet-potato-growing farmland around Sikasso, using the vine's leaves as well as its roots reflects a practical, waste-nothing approach to a crop families here grow themselves.
