The battered fish taco is widely credited to Ensenada's fish market stands in the 1950s, and its spread to San Diego decades later is what introduced most of the US to the fish taco in the first place.
A piece of white fish, usually cazón or corvina, is dipped in a beer batter and deep-fried, then tucked into a corn tortilla with shredded cabbage, crema, and a squeeze of lime. Seafood stands lining Ensenada's fish market are considered the dish's home base.
Why it's made this way: Baja California's Pacific coastline, and Ensenada's fish market in particular, is widely credited as the birthplace of the battered, beer-fried fish taco, though San Felipe also claims it.
