The tiny fishing village of Puerto Nuevo, once home to only a handful of families, now has dozens of restaurants built almost entirely around this one lobster preparation.

A whole lobster is split, fried in lard until the shell turns bright red and the meat crisps at the edges, then served simply with rice, beans, tortillas, and melted butter or salsa on the side. Stands and small restaurants in Puerto Nuevo, south of Rosarito, have built their reputation on this exact style.

Why it's made this way: Local fishing families in Puerto Nuevo started frying their own lobster catch for passing travelers decades ago, turning one village's home-style cooking method into a recognized Baja specialty.
