La Guerrerense, a street cart in Ensenada known for its sea urchin and clam tostadas, became internationally famous after Anthony Bourdain featured it on television.
A crisp fried tortilla is piled high with a choice of shrimp, octopus, or ceviche mixed with avocado, tomato, and a squeeze of lime and hot sauce. Street carts throughout Tijuana and Ensenada sell them as an open-faced, fork-required snack.
Why it's made this way: Baja California's Pacific and Sea of Cortez waters supply sea urchin, clams, octopus and shrimp, so its carts offer a wider range of raw toppings than most seafood stands in Mexico.
