The dish is named after the silver miners of Guanajuato, whose wives are said to have cooked it for them at the mine entrances.
Corn tortillas fried in red chile sauce and filled with cheese, served with potatoes and carrots, found at the stalls of Mercado Hidalgo and small fondas in Guanajuato city.
Why it's made this way: They are tied to Guanajuato's colonial silver-mining history and are regarded as the capital's signature dish.
