The usual story says a talkative customer was told 'be quiet, you sound like a macaw', and the name stuck to the torta.
A bolillo roll stuffed with crunchy pork chicharrón, pico de gallo and hot salsa, sometimes with avocado, sold from carts and stands around central León.
Why it's made this way: Guacamayas have been sold in León since around the 1950s and are considered the city's emblematic street food.
