Vendors pour it from cup to cup from a height to raise the thick foam it is known for.
An ice-cold, foamy drink of cacao, cinnamon and rice or corn sweetened with piloncillo, sold by street vendors and often paired with filled bolillos.
Why it's made this way: It comes from Guerrero's Costa Chica, especially Ayutla de los Libres, and is widely drunk in Acapulco.
