Real del Monte holds an International Paste Festival every October, honouring the Cornish miners who brought the recipe.
Half-moon pastries filled with potato and ground beef, or Mexican fillings like mole and tinga, plus sweet versions with pineapple or sweetened rice, sold from paste shops and windows in Pachuca and Real del Monte.
Why it's made this way: Cornish miners brought the pasty to Real del Monte and Pachuca from 1824, and the Hidalgo mining towns turned it into their own snack.
