A single zacahuil can reach about a meter and a half long and feed well over a hundred people.
A huge tamal of coarsely ground masa, pork and chile sauce wrapped in banana leaves and baked whole in a wood oven, then sold by the portion at Sunday markets in towns like Huejutla.
Why it's made this way: It is a food of the Huasteca, the region that takes in northeastern Hidalgo, and appears among the state's traditional dishes.
