Cantaritos are traditionally served in small clay cups whose porous walls are said to subtly change the drink's flavor over the course of an evening as they absorb some of the liquid.

Tequila is mixed with grapefruit, orange, and lime sodas, then served over ice in a hand-thrown clay cup with a salted rim. Street carts around Jalisco's plazas and the town of Tequila's own square sell them to evening crowds.

Why it's made this way: The drink is built on tequila, which by law can only be produced in Jalisco and a handful of neighboring municipalities, tying the cocktail directly to the state.
