The dish was invented at a single Guadalajara restaurant, Karne Garibaldi, which for years held a Guinness World Record for fastest table service specifically because carne en su jugo is so quick to plate.

Finely chopped grilled beef and bacon simmer in their own beefy juices with pinto beans, then get ladled into a bowl and topped with raw onion, cilantro, and a squeeze of lime. Market counters and casual comedores across Guadalajara serve it as a soupy, savory lunch.

Why it's made this way: The dish is a Guadalajara original from the mid-20th century, now considered one of Jalisco's defining contributions to Mexican street and market food.
