The sandwich is fully submerged in chile sauce right before serving, which is why it's named the 'drowned torta' — vendors ladle sauce over it until it's swimming, not just dipped.

A crusty birote roll is stuffed with fried pork carnitas, then drowned in a spicy tomato-arbol chile sauce and served in a bowl to catch the drips. Guadalajara market stands sell them as a messy, spicy lunch staple, often with a squeeze of lime and raw onion.

Why it's made this way: The torta depends on Guadalajara's uniquely crusty birote bread, baked with a sourdough starter found almost nowhere else, making the dish inseparable from the city.
