It shares a name with Spain's cold tomato soup but contains no tomato: it is chopped fruit with grated cheese and onion.
Diced mango, pineapple and jícama dressed with orange and lime juice, chile powder, grated cheese and sometimes onion, sold in cups from shops and stands in central Morelia.
Why it's made this way: It is a Morelia invention, and a stretch of Quintana Roo street near the historic centre is lined with shops selling almost nothing else.
