Cemitas Poblanas

A proper cemita relies on pápalo, a pungent, citrusy herb that locals say cannot be swapped for cilantro without changing the sandwich.

A soft, sesame-seed egg bread roll is stuffed with breaded milanesa, quesillo cheese, avocado, chipotle peppers, and the herb pápalo. Puebla's covered markets are lined with stalls dedicated entirely to cemitas.

Why it's made this way: The cemita bread is a Puebla specialty, and pairing it with pápalo gives the sandwich a flavor strongly identified with the city.
