Beyond potato and chorizo, Puebla molotes come stuffed with huitlacoche, squash blossoms, cheese or even brains (sesos).

Corn masa is stuffed with a filling of potato and chorizo or tinga, sealed into a football-shaped pocket, and deep-fried until crisp. Street carts around Puebla's markets top them with shredded lettuce, crema, salsa, and crumbled queso fresco.

Why it's made this way: Molotes are a staple of Puebla's street-cart tradition, part of the state's large repertoire of fried masa antojitos sold alongside chalupas and quesadillas.
