Tacos árabes, made with Lebanese pita-style pan árabe bread, are considered the direct ancestor of tacos al pastor — Lebanese immigrants in Puebla adapted their shawarma spit years before the dish evolved into pastor in Mexico City.

Marinated pork is stacked and roasted on a vertical spit exactly like shawarma, then shaved and wrapped in a soft wheat flatbread rather than a corn tortilla. Street carts around downtown Puebla still serve it in this original wheat-wrap style.

Why it's made this way: Lebanese immigrants who settled in Puebla in the early 1900s created this dish first, giving Puebla a direct claim on the origin of Mexico's whole spit-roasted-pork taco tradition.
