Tacos de Marlín

The marlin is smoked whole first, then shredded and fried with vegetables, so the smoky flavor comes from the fish itself rather than from any spice or sauce added later.

Smoked marlin is shredded and sautéed with tomato, onion, and jalapeño, then piled onto a fried corn tortilla and topped with cabbage and crema. Seafood carts along Mazatlán's malecón sell them as a quick, smoky-tasting bite.

Why it's made this way: Mazatlán's Pacific fishing fleet made marlin an everyday catch, and smoking it became a practical way to use and preserve the large fish before it's turned into tacos.
