It is built on a tortilla sobaquera, a paper-thin Sonoran flour tortilla named for being stretched almost as long as the maker's arm.

A huge flour tortilla wrapped around grilled carne asada, melted cheese, avocado, tomato, mayonnaise and salsa, sold mostly at night from food trucks and stands.

Why it's made this way: It comes from Hermosillo and Guaymas, where it grew out of Sonora's flour-tortilla and beef traditions and is one of the most popular night foods.
