One explanation of the name: the girls who carried baskets of them through Hermosillo's streets were called 'coyotitas', an old term for mixed-heritage girls.

Thin, flat rounds of wheat dough made with lard, filled with piloncillo (panocha) and baked, sold from bakeries and stands around Hermosillo.

Why it's made this way: They were first sold in the early 1950s in Villa de Seris, an old neighbourhood of Hermosillo, and are now Sonora's typical sweet.
