Unlike its cousin panucho, a salbute tortilla is never split or stuffed with beans — it's left plain and puffed, so the toppings sit entirely on top instead of tucked inside.

A small corn tortilla is deep-fried until it puffs into a light, bubbled disc, then topped with shredded turkey or chicken, shredded cabbage, tomato, avocado, and pickled red onion. Market stalls across the Yucatán sell them alongside panuchos, often at family gatherings and Sunday lunches.

Why it's made this way: Salbutes and panuchos are considered sister dishes of Yucatecan market cooking, with the unstuffed salbute usually regarded as the older, simpler version of the two.
