Its name translates simply to 'soup with food in it' — in Gobi ger camps it's served so routinely that some families eat a version of it nearly every day rather than treating it as a special dish.

Hand-torn noodles are simmered together with mutton and whatever root vegetables are on hand into a single thick, warming soup. It's a near-daily staple in Gobi households and camel camps, prized for using minimal fuel and water in a region where both are scarce.

Why it's made this way: With little firewood or fresh produce available across the open desert, a one-pot noodle-and-meat soup that stretches scarce ingredients became the default Gobi household meal.
