The spicing habit likely traveled the same dhow routes as the crab curry's cardamom — coffee simmered with warm spices is a signature of Swahili coast towns running from Zanzibar down to Ilha de Moçambique.

Coffee is brewed strong and simmered with warming spices such as cardamom, ginger, or cinnamon, then served in small cups, often alongside dhow-tour meals on Ilha de Moçambique. It's a bolder, spicier cup than the plain Portuguese-style coffee found elsewhere in the country.

Why it's made this way: Ilha de Moçambique's old town grew up as a Swahili and Arab trading hub before the Portuguese arrived, and this spiced coffee style is one of the few living food links back to that era.
