A good Mandalay shop brings the noodles dry, dressed in a rich pork-fat gravy, with the broth served separately in its own small bowl — never poured together until the customer decides to.

Round rice noodles are tossed in a savory minced-pork gravy, topped with bean sprouts, crushed peanuts and a drizzle of chili oil, and served alongside a light pork broth for sipping or pouring in. Noodle shops across Mandalay have built multi-generation reputations on their own version.

Why it's made this way: Though the noodle-cooking style traces back to Shan influence, Mandalay adopted and refined it into a local institution, with individual noodle shops in the city becoming destinations in their own right.
