The dish's home neighborhood began as a mule-caravan camping ground — King Mindon granted the land to Chinese Muslim refugees in the 1860s precisely because caravans from Yunnan had always stopped there.
Flat wheat noodles are stir-fried with chicken in a warm blend of Yunnanese spices and chili, finished with a scatter of fresh herbs. It's a signature dish of Mandalay's Panthay community, sold from halal stalls in and around the neighborhood built around their historic mosque.
Why it's made this way: The Panthay are Hui Chinese Muslims who fled unrest in Yunnan during the Panthay Rebellion (1856-1873) and settled in Mandalay under King Mindon's protection, completing the city's second-oldest mosque on the granted site in 1868 and bringing their Yunnanese noodle cooking with them.
