The curried duck egg on top gets its own separate cooking step — boiled, sliced, then briefly simmered in a small curry of its own — rather than being just a plain boiled egg.

Glass noodles are tossed with boiled prawn, shredded vegetables and a tangy dressing, then topped with a wedge of curried duck egg. Rakhine market stalls sell it as a cooling counterpoint to the region's heavier noodle soups.

Why it's made this way: The salad leans on Rakhine State's coastal seafood supply — prawns rather than the dried shrimp used in salads further inland — reflecting the region's position directly on the Bay of Bengal.
