The broth's faint green tint comes from green chili paste stirred directly into the soup — a distinctly Rakhine touch that sets it apart from the country's far more famous fish noodle soup, mohinga.

Rice vermicelli is served in a broth simmered from daggertooth pike-conger fish and ngapi, seasoned with lemongrass and green chili paste, and can be ordered as a soup or tossed as a drier salad. Markets across Rakhine State sell it as their own answer to Myanmar's ubiquitous morning noodle soup.

Why it's made this way: Mont di is considered a semi-staple dish of Rakhine State, built on the region's abundant marine fish and its own milder style of ngapi made from sea fish rather than the freshwater fish paste used further inland.
