It's the signature dish of the Intha, the Inle Lake people famous for fishing standing up while rowing with one leg — and the lake shows up directly in the dish, built around its own fish and rice.

Rice is kneaded with tomato paste, mashed potato and flaked local lake fish into small tinted balls, finished with crispy fried garlic, garlic-chive roots and a side of chili oil. It's sold as a quick handheld snack around Inle Lake's markets and floating villages.

Why it's made this way: As the signature dish of the Intha people of Inle Lake, htamin jin draws on ingredients unique to that one lake environment — its own highland rice variety, freshwater fish and famously creamy Shan potatoes.
