Kyay Oh

A well-loaded bowl can carry half a dozen different pork parts at once — liver, intestine, meatballs and wontons all simmered together in one broth rather than served separately.

Rice vermicelli is served in a light pork broth loaded with a mix of pork offal, meatballs and sometimes wontons, garnished with fried garlic and coriander. Yangon's Chinatown and its surrounding noodle shops are where the dish is most firmly rooted.

Why it's made this way: Kyay oh reflects the Chinese immigrant communities who settled in Yangon's Latha township, bringing a noodle-soup style built around ingredients Chinese cooks worked with across the wider region.
