Chatamari is often nicknamed "Nepali pizza" because the round rice crepe is topped like one — minced meat, egg, and vegetables spread over the batter before it cooks.

Chatamari is a thin crepe made from rice flour batter poured onto a hot griddle, then topped with spiced minced meat, a cracked egg, or chopped vegetables before being covered to finish cooking. It is cut into wedges and served hot, often alongside a chili dipping sauce, from Newari kitchens and street carts in Kathmandu's old town.

Why it's made this way: Chatamari comes from Newari cuisine of the Kathmandu Valley, where rice has long been ground into flour for ceremonial foods, and the dish is traditionally served during Newari festivals before becoming an everyday street snack.
