In the town of Masatepe, the soup is such a fixed Sunday ritual that many households and comedores simply stop serving anything else that day.

Fresh cuajada cheese is folded into balls of corn masa and simmered in a milky broth thickened with more cheese and cream. Comedores and street-side kitchens in Masatepe ladle it into bowls from huge pots every Sunday morning.

Why it's made this way: The dish is credited specifically to Masatepe, one of the towns of Masaya department, where dairy farming and corn cultivation meet on the fertile slopes below the Mombacho volcano range.
