Sopa de queso is one of the classic meatless dishes of Nicaraguan Semana Santa, alongside almíbar and fish dishes.

Fresh cuajada cheese is kneaded into balls of corn masa and simmered in a broth enriched with milk, onion and more cheese. Comedores and home cooks ladle it into bowls, especially during Lent.

Why it's made this way: Sopa de queso is a Nicaraguan Lenten dish, eaten across the country when meat is avoided during Holy Week.
