The technique relies on trapped steam alone to cook the meat through — the pot is sealed shut and never opened until serving, so the dish essentially braises itself in its own juices.

Meat is layered with a light hand of spice in a heavy pot, sealed tightly, and left over low indirect heat for hours until it cooks through in its own juices. Balochi cooks serve it at markets and family gatherings as a milder, slow-cooked alternative to grilled meat.

Why it's made this way: Like sajji, it reflects a wider Balochi preference for cooking meat with minimal spicing over indirect heat, prioritizing the natural flavor of the meat over a heavy sauce.
