It's nicknamed 'pathar ki roti' — stone bread — because the dough is baked wrapped directly around a heated stone, and the finished loaf comes out hard enough to keep for weeks without spoiling.

Wheat dough is flattened around a fire-heated stone and baked in a tandoor until it hardens into a dense, chewy loaf, sometimes flecked with sesame seeds. It's the standard bread served alongside sajji at Balochistan's roadside grill stalls, torn apart to scoop up the meat.

Why it's made this way: Its stone-baked method and long shelf life suited the needs of Baloch pastoral and nomadic households, and it carries enough cultural weight that fathers traditionally feed it to their daughters the night before their wedding.
