In a province famous for meat roasted over open fire, its 750-kilometer Arabian Sea coastline quietly supports a completely different food tradition built around the daily catch instead — the dish's own name is just Balochi for 'fish and rice.'

Fresh fish, usually a whole small catch, is fried or simmered in a light spiced gravy and served over plain steamed rice. Gwadar and other Balochi coastal towns serve it at harborside stalls where the fish is sold within hours of coming off the boat.

Why it's made this way: Balochistan's long Arabian Sea coastline gave its port towns a fish-and-rice food culture distinct from the inland province's meat-and-bread staples.
