Sajji

Authentic Balochi sajji uses nothing on the meat but salt, and sometimes a touch of garam masala — no heavy marinade — because the point is to taste the lamb itself, not a sauce.

A whole lamb or chicken is skewered and propped upright around an open wood fire, slow-roasting for hours until the outside chars and the meat inside stays tender. Balochistan's roadside sajji houses carve it to order and serve it with kaak bread instead of rice.

Why it's made this way: The dish reflects the pastoral Baloch tradition of cooking meat simply over open fire with minimal seasoning, letting the quality of the animal carry the dish rather than a heavy spice blend.
