The dumpling's lineage traces along old Central Asian trade routes, making it a distant cousin of the Tibetan momo eaten hundreds of kilometers to the east.

Dough pockets are filled with minced meat and onion, steamed until tender, and served topped with yogurt, black pepper, and a splash of vinegar or chili sauce. Gilgit-Baltistan's towns along the Karakoram Highway serve it as a hearty, warming plate in the mountain cold.

Why it's made this way: Its steamed-dumpling format reflects the region's Central Asian-influenced food culture, distinct from the fried and grilled street food found in Pakistan's lowland cities.
