Despite the name that made it famous on menus worldwide, this stuffed, nut-and-raisin naan is closer to a dessert bread than the plain naan most of Pakistan eats alongside its curries.
Leavened dough is stuffed with a sweet filling of chopped almonds, coconut, and raisins, then slapped onto the wall of a clay tandoor until it puffs and blisters. Peshawar's bakeries pull it hot to sell alongside kebabs and karahi at dinner.
Why it's made this way: It grew out of Peshawar's tandoor bread tradition, where bakers found that a sweet, nut-filled version paired well with the city's heavily spiced grilled meats.
