Lassi

Traditional Punjabi lassi is whipped from water-buffalo milk and served in a squat clay cup called a kulhar — a vessel used once and then broken rather than washed and reused.

Thick yogurt is churned with water, sometimes malai (cream), and either sugar or salt and cumin, then poured frothy into a tall glass or clay cup. Lahore's dairy shops churn it fresh to order, often piling extra malai and pistachio on top.

Why it's made this way: Lassi developed in Punjab as a way to use surplus buffalo milk, and it remains the region's defining street drink, sold from dedicated lassi shops rather than general juice stalls.
